Fermented for 7 months in neutral barrels with fresh apricots from Red Jacket Orchards & wild yeast cultures. Similar to the lambic style traditional to Belgium, the lingering dry finish is complex with pleasing tartness and vibrant fruitiness. Pair it with spiced and spicy dishes, roasted chicken and brie cheese.
